Suppon, Japanese soft-shelled turtle, has long been a favorite food of Japan's noble classes. It is said to have nourishing and tonic medicinal properties, and has long been loved both as a medicinal ingredient and as a tasty dish. Profile of Owner ChefToru Eguchi

Eguchi started his professional career at the age of 16 and received training at top-tier Japanese cuisine restaurants in the Kyoto area.
His career overseas where he was Grand Chef at the main dining room in a New York hotel.
He relocated his restaurant Kuikiri Eguchi to Ginza in 2009.
Eguchi has been lauded by the finest gourmets in the world who return again and again to savor his inimitable cuisine. He continues his pursuit of perfecting his art of preparing and presenting sublime Japanese dishes.
